Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth or water
  • Optional toppings: sour cream, chopped green onions, jalapeños, shredded cheese

Instructions:

  1. Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Brown the Beef: In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Sauté Vegetables: Add the diced onion, bell pepper, and garlic to the skillet with the beef. Cook for 5-7 minutes until the vegetables are softened.
  4. Add Tomatoes and Beans: Stir in the diced tomatoes, kidney beans, and tomato sauce. Mix well.
  5. Season the Chili: Add chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Stir to combine.
  6. Simmer: Pour in the beef broth or water. Bring the mixture to a simmer, reduce the heat to low, and let it cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld together.
  7. Combine with Macaroni: Add the cooked macaroni to the chili mixture, stirring to combine. Allow the pasta to absorb some of the sauce.
  8. Add Cheese: Stir in the shredded cheddar cheese until melted and evenly distributed.
  9. Serve: Spoon the Spicy Chili Mac into bowls and top with your favorite toppings like sour cream, chopped green onions, jalapeños, and extra cheese.

Enjoy your Spicy Chili Mac hot and savor the comforting blend of flavors and textures!
