Lattice Chicken Potpie

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cooked and cubed
  • 1 cup frozen peas

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Stir in the flour and cook for 1-2 minutes until the mixture is golden and bubbly.
  4. Gradually whisk in the chicken broth and heavy cream, stirring constantly until the sauce thickens, about 5 minutes.
  5. Add the salt, black pepper, thyme, and rosemary. Stir to combine.
  6. Stir in the cooked chicken, peas, carrots, and corn. Cook for another 2-3 minutes until the vegetables are heated through.
  7. Roll out one pie crust and fit it into the bottom of a 9-inch pie dish.
  8. Pour the chicken and vegetable filling into the pie crust.
  9. Roll out the second pie crust and cut it into 1/2-inch-wide strips. Arrange the strips over the filling in a lattice pattern.
  10. Brush the lattice crust with the beaten egg to give it a golden finish.
  11. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Let the potpie cool for a few minutes before serving.
