Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 2 carrots, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced

For the Teriyaki Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Sliced green onions (optional, for garnish)

Instructions:

  1. Marinate the Beef: In a bowl, toss the sliced beef with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Let it marinate for about 10-15 minutes while you prepare the vegetables.
  2. Prepare the Teriyaki Sauce: In a small saucepan, combine the soy sauce, water, honey or brown sugar, and rice vinegar. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes. Remove from heat and stir in the sesame oil. Set aside.
  3. Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned and just cooked through. Remove the beef from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onion, bell peppers, broccoli, and carrots. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp. Add the minced garlic and ginger, and stir-fry for another minute until fragrant.
  5. Combine and Sauce: Return the cooked beef to the skillet with the vegetables. Pour the teriyaki sauce over the beef and vegetables, stirring to coat everything evenly. Cook for another 1-2 minutes, until everything is heated through and well combined.
  6. Serve: Serve the Teriyaki Beef Stir-Fry over steamed rice or noodles. Garnish with sesame seeds and sliced green onions if desired.

Enjoy this Teriyaki Beef Stir-Fry as a delicious, easy-to-make meal that’s perfect for any night of the week!
