TURKEY EGG ROLLS

  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce

  • 12-16 egg roll wrappers
  • Water, for sealing the wrappers

Instructions:

  1. Cook the Filling:
    • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. If using raw ground turkey, cook it until browned and fully cooked, breaking it up with a spoon as it cooks. If using cooked turkey, simply heat it through.
    • Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant.
    • Stir in the shredded cabbage, carrots, bean sprouts, and green onions. Cook for 3-4 minutes, or until the vegetables are just tender.
    • Add the soy sauce, sesame oil, and black pepper, mixing well to combine. Remove the skillet from heat and allow the filling to cool slightly.
  2. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean, flat surface with one corner pointing toward you (like a diamond shape).
    • Place about 2 tablespoons of the turkey filling near the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up the wrapper tightly, sealing the top corner with a little water.
    • Repeat with the remaining wrappers and filling.
  3. Fry the Egg Rolls:
    • In a large, deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
    • Fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes per batch. Be careful not to overcrowd the skillet.
    • Remove the egg rolls with a slotted spoon and drain on paper towels.
