Sun-Dried Tomato Focaccia Turkey Sandwich

Ingredients:

  • 1 large piece of sun-dried tomato focaccia, cut into sandwich-sized portions

  • 1/4 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons pesto
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Focaccia: If your focaccia isn’t pre-sliced, cut it into sandwich-sized portions. You can lightly toast the focaccia in a skillet with a little olive oil if you prefer a crispier texture.
  2. Make the Pesto Mayo: In a small bowl, mix the mayonnaise and pesto until well combined. This spread will add an extra layer of flavor to the sandwich.
  3. Assemble the Sandwich:
    • Spread a generous amount of the pesto mayo on both halves of the focaccia.
