MEAT LOAF GYROS

Ingredients:

    • 1/2 teaspoon ground coriander
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Tzatziki Sauce:
    • 1 cup Greek yogurt
    • 1/2 cucumber, grated and excess moisture squeezed out
    • 2 cloves garlic, minced
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon olive oil
    • 1 tablespoon fresh dill, chopped (optional)
    • Salt and black pepper, to taste
  • For the Gyros:
    • 4-6 pita breads
    • 1 cup lettuce, shredded
    • 1 tomato, sliced
    • 1/2 red onion, thinly sliced
    • Feta cheese, crumbled (optional)
    • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Prepare the Meat Loaf:
    • In a large mixing bowl, combine the ground beef or lamb, breadcrumbs, milk, chopped onion, minced garlic, beaten egg, oregano, cumin, paprika, coriander, salt, and black pepper. Mix until all ingredients are well incorporated, being careful not to overwork the meat.
    • Transfer the meat mixture to the prepared loaf pan, pressing it into an even layer.
  3. Bake the Meat Loaf:

    • While the meat loaf is baking, prepare the tzatziki sauce. In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and fresh dill (if using). Mix well and season with salt and black pepper to taste. Refrigerate until ready to use.
  5. Assemble the Gyros:
    • Warm the pita breads in the oven or on a skillet.
    • Place a slice of meat loaf in each pita, then top with shredded lettuce, tomato slices, red onion, and crumbled feta cheese if desired.
    • Drizzle with tzatziki sauce and garnish with fresh parsley.
