Oreo Cheesecake Bars

Ingredients

Crust:

  • 24 Oreo cookies
  • 1/4 cup (60g) unsalted butter, melted

Filling:

  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup (60ml) sour cream
  • 12 Oreo cookies, coarsely chopped

Topping:

  • 8 Oreo cookies, crushed

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 325°F (165°C). Line a 9×9 inch (23×23 cm) baking pan with parchment paper, leaving an overhang on the sides for easy removal.
    • In a food processor, pulse the 24 Oreo cookies until finely ground. Add the melted butter and pulse until combined.
    • Press the mixture evenly into the bottom of the prepared pan to form a crust. Bake for 8-10 minutes, then remove from the oven and let it cool slightly.
  2. Make the Filling:
    • In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
    • Add the vanilla extract and mix well.
    • Add the eggs, one at a time, beating well after each addition.
    • Stir in the sour cream until the mixture is smooth.
    • Gently fold in the coarsely chopped Oreo cookies.
  3. Assemble and Bake:
    • Pour the cheesecake filling over the crust and spread evenly.
    • Sprinkle the crushed Oreos on top of the filling.
    • Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  4. Cool and Serve:
    • Remove from the oven and let the bars cool to room temperature.
    • Refrigerate for at least 2 hours, or until fully set.
    • Lift the bars out of the pan using the parchment overhang and cut into squares.
    • Serve chilled and enjoy!
