They are light, flaky, and bursting with fresh strawberries, providing a lovely balance of sweetness and tartness. The scones are easy to make and fill your kitchen with a heavenly aroma as they bake. Serve them warm with clotted cream or a dollop of butter and a drizzle of honey or jam for an irresistible treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 2 tablespoons turbinado sugar (optional, for sprinkling)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Prepare Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
  5. Combine Wet and Dry Ingredients: Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a fork until just combined. Do not overmix.
  6. Fold in Strawberries: Gently fold in the diced strawberries until evenly distributed throughout the dough.
  7. Shape the Dough: Turn the dough out onto a lightly floured surface and pat it into a circle about 1 inch thick. Use a sharp knife or a bench scraper to cut the circle into 8 wedges.
  8. Bake: Place the scones on the prepared baking sheet, spacing them about 2 inches apart. Brush the tops with a little heavy cream and sprinkle with turbinado sugar if desired.
  9. Bake: Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  10. Cool and Serve: Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm with your favorite toppings.

Enjoy these delightful strawberry scones with a cup of tea or coffee!
