Beef and Broccoli

Beef and Broccoli is a classic Chinese-American dish that combines tender slices of beef with crisp, vibrant broccoli florets in a savory and slightly sweet sauce. Ingredients:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • 3 cups broccoli florets
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 1/4 cup beef broth or water
  • Salt and pepper to taste
  • Optional: 1 tablespoon sesame seeds for garnish

Instructions:

  1. Marinate the Beef:
    • In a medium bowl, combine the sliced beef, 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of pepper. Mix well and let it marinate for at least 15 minutes.
  2. Prepare the Sauce:
    • In a small bowl, mix together the remaining soy sauce, oyster sauce, sugar, and beef broth. Set aside.
  3. Cook the Broccoli:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for about 3-4 minutes, until they are bright green and tender-crisp. Remove the broccoli from the skillet and set aside.
  4. Cook the Beef:
    • In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
    • Add the marinated beef to the skillet in a single layer. Cook for about 2-3 minutes on each side, until the beef is browned and cooked through.
  5. Combine and Serve:
    • Return the broccoli to the skillet with the beef. Pour the prepared sauce over the beef and broccoli, and stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the beef and broccoli evenly.
    • Taste and adjust seasoning with salt and pepper if needed.
    • Garnish with sesame seeds, if desired, and serve hot over steamed rice or noodles.
