CHICKEN GYROS

Ingredients:

  • For the Chicken Marinade:
    • 1 pound boneless, skinless chicken breasts or thighs, cut into strips
    • 1/4 cup olive oil
    • Juice of 1 lemon
    • 3 cloves garlic, minced
    • 1 tablespoon red wine vinegar
    • 1 teaspoon dried oregano
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • Salt and black pepper, to taste
  • For the Tzatziki Sauce:
    • 1 cup Greek yogurt
    • 1/2 cucumber, grated and excess moisture squeezed out
    • 2 cloves garlic, minced
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon olive oil
    • 1 tablespoon chopped fresh dill or mint
    • Salt and black pepper, to taste
  • For the Gyros:
    • 4-6 pita breads
    • 1/2 red onion, thinly sliced
    • 1 cup cherry tomatoes, halved
    • 1/2 cucumber, sliced
    • 1/4 cup crumbled feta cheese (optional)
    • Fresh parsley, chopped (optional)

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine the olive oil, lemon juice, minced garlic, red wine vinegar, dried oregano, cumin, smoked paprika, salt, and black pepper. Add the chicken strips and toss to coat.
    • Cover and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to meld.
  2. Make the Tzatziki Sauce:
    • In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and fresh dill or mint. Season with salt and black pepper to taste.
    • Cover and refrigerate until ready to use.
  3. Cook the Chicken:
    • Heat a grill or skillet over medium-high heat. Once hot, cook the marinated chicken strips for 4-5 minutes on each side, or until fully cooked through and nicely charred. Remove from heat and let rest for a few minutes.
  4. Assemble the Gyros:
    • Warm the pita breads in the oven or on a skillet for a few minutes until soft and pliable.
    • Place a few strips of cooked chicken onto each pita.
    • Top with sliced red onion, cherry tomatoes, cucumber, and crumbled feta cheese if desired.
    • Drizzle with tzatziki sauce and sprinkle with fresh parsley.
  5. Serve:
    • Fold the pita bread around the fillings and serve immediately.
