  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. Cook the Vegetables: In the same skillet, add the onion, garlic, red bell pepper, and green bell pepper. Sauté until the vegetables are tender, about 5 minutes.
  3. Make the Sauce: In a bowl, combine the reserved pineapple juice, coconut milk, soy sauce, brown sugar, and ginger. Mix well and pour the sauce into the skillet with the vegetables.
  4. Combine and Simmer: Return the chicken breasts to the skillet. Add the pineapple chunks. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
