  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (optional, for added heat)
  • Salt and pepper to taste
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Prepare the Ingredients:
    • Slice the kielbasa sausage into 1/4-inch thick rounds.
    • Chop the onion, mince the garlic, and chop the red bell pepper.
  2. Cook the Kielbasa:
