This one-pot meal is packed with seasoned ground beef, beans, corn, and tomatoes, all simmered in a rich broth with taco spices. Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips

Instructions:

  1. Cook the Ground Beef:
    • In a large pot, cook ground beef over medium heat until browned. Add the chopped onion and garlic, and sauté until softened.
  2. Add Remaining Ingredients:
    • Stir in black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, taco seasoning, and beef broth. Bring to a simmer.
  3. Simmer:
    • Reduce heat and let the stew simmer for 20-30 minutes, stirring occasionally.
  4. Serve:
