Shrimp Risotto

Shrimp Risotto is a luxurious and creamy Italian dish that combines tender Arborio rice with succulent shrimp, creating a perfectly balanced meal. The risotto is cooked slowly in a flavorful broth, absorbing all the rich flavors as it becomes creamy and smooth. The shrimp, sautéed with garlic and a touch of lemon, add a delicate seafood flavor that complements the richness of the risotto. Finished with a sprinkle of Parmesan cheese and fresh herbs, this dish is perfect for a special dinner or a comforting weekend meal.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 cup Arborio rice
  • 4 cups chicken or seafood broth, kept warm
  • 1/2 cup dry white wine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice

  • Fresh parsley for garnish

Instructions:

  1. Cook the Shrimp:
    • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and garlic, sautéing until the shrimp are pink and cooked through. Remove the shrimp and set aside.
  2. Prepare the Risotto:
    • In the same skillet, heat the remaining olive oil and butter. Add the onion and sauté until translucent. Stir in the Arborio rice, cooking until lightly toasted. Pour in the white wine and cook until absorbed.
  3. Add the Broth:
    • Gradually add the warm broth, one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue until the rice is creamy and tender, about 18-20 minutes.
  4. Finish the Dish:
    • Stir in the cooked shrimp, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
  5. Serve:
    • Garnish with fresh parsley and serve immediately.
