Minestrone Soup Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 zucchini, diced
  • 1 potato, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 1 cup pasta (such as ditalini or small shells)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 cups fresh spinach or kale, chopped
  • Grated Parmesan cheese, for serving (optional)
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
  2. Add Carrots and Celery: Stir in the carrots and celery and cook for another 5 minutes until they begin to soften.
  3. Add Zucchini and Potato: Add the zucchini, potato, and green beans to the pot. Cook for 5 more minutes, stirring occasionally.
  4. Add Tomatoes and Broth: Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Add Beans and Pasta: Stir in the cannellini beans, pasta, oregano, and basil. Season with salt and pepper. Continue to simmer until the pasta is cooked and the vegetables are tender, about 10-12 minutes.
  6. Add Greens: Stir in the fresh spinach or kale and cook until wilted, about 2 minutes.
  7. Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh herbs, if desired. Serve hot with crusty bread.
