- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (14 oz) cannellini beans, drained and rinsed
- 1 cup pasta (such as ditalini or small shells)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 cups fresh spinach or kale, chopped
- Grated Parmesan cheese, for serving (optional)
- Fresh basil or parsley, for garnish (optional)
Instructions
- Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
