Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 6 cups vegetable or chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 bunch kale, stems removed and leaves chopped
  • 1 tablespoon lemon juice
  • Grated Parmesan cheese, for serving (optional)
  • Crusty bread, for serving (optional)

Instructions:

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for about 2 minutes until the onion is translucent. Add the carrots and celery, and continue to cook for 5 minutes until the vegetables are slightly softened.
  2. Add Herbs and Seasoning: Stir in the thyme, rosemary, bay leaf, salt, and pepper. Cook for another minute until the herbs are fragrant.
  3. Simmer the Soup: Pour in the broth and bring the mixture to a boil. Reduce the heat to low and add the cannellini beans. Simmer the soup for about 15 minutes, allowing the flavors to meld.
  4. Add Kale: Stir in the chopped kale and continue to simmer for another 5 minutes until the kale is wilted and tender.
  5. Finish and Serve: Remove the bay leaf and stir in the lemon juice. Taste and adjust the seasoning if necessary. Serve hot, garnished with grated Parmesan cheese and accompanied by crusty bread, if desired.

Enjoy your bowl of Tuscan warmth and goodness!
