Ingredients

  • 2 racks of baby back ribs (about 4 pounds)
  • Salt and pepper to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 cups root beer
  • 1 ½ cups ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon liquid smoke (optional)
  • 1 teaspoon chili powder

Instructions

  1. Prepare the Ribs:
    • Remove the membrane from the back of the ribs for better seasoning penetration.
    • Season the ribs with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Cook the Ribs:
    • Preheat your oven to 300°F (150°C).
    • Place the ribs in a large roasting pan and pour 1 cup of root beer over them.
    • Cover the pan tightly with aluminum foil and bake for 2 ½ to 3 hours, or until the ribs are tender.
  3. Make the Root Beer BBQ Sauce:
    • In a saucepan, combine the remaining 1 cup of root beer, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, liquid smoke, and chili powder.
    • Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the sauce thickens.
  4. Grill the Ribs:
    • Preheat your grill to medium-high heat.
    • Remove the ribs from the oven and place them on the grill.
    • Brush generously with the root beer BBQ sauce.
    • Grill for 10-15 minutes, basting with more sauce and turning occasionally, until the ribs are nicely caramelized.
  5. Serve:
    • Remove the ribs from the grill and let them rest for a few minutes.
    • Slice into individual ribs and serve with extra BBQ sauce on the side.
