Sweet Chili & Orange Chicken

Ingredients:

  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup fresh orange juice
  • Zest of 1 orange
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions:

  1. Prepare the Chicken:
    • Season the chicken pieces with salt and pepper.
    • In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Make the Sauce:

    • Return the cooked chicken to the skillet, tossing to coat the chicken pieces evenly with the sauce. Cook for an additional 2 minutes to heat through.
    • Garnish with sliced green onions and sesame seeds before serving.
