Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 1/2 cups shredded cheddar cheese
  • 24 wonton wrappers
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream, salsa, and guacamole for serving

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the taco seasoning and a splash of water, cooking according to the package instructions until well combined.
  3. Prepare the Filling: Stir in the diced tomatoes, black beans, and corn. Cook for another 2-3 minutes until heated through.
  4. Assemble the Taco Cups: Lightly grease a muffin tin. Place a wonton wrapper into each cup, pressing down gently to form a cup shape. Spoon a tablespoon of the beef mixture into each wonton wrapper. Top with a sprinkle of shredded cheese.
  5. Bake: Bake in the preheated oven for 8-10 minutes or until the wonton wrappers are golden brown and the cheese is melted.
  6. Garnish and Serve: Remove from the oven and let cool slightly. Top with fresh cilantro if desired. Serve warm with sour cream, salsa, and guacamole on the side.
