  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil

  • 1/2 cup crumbled goat cheese or feta (optional)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Prepare the Crust:
    • In a large bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, 1 tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Roast the Squash:
    • Preheat the oven to 400°F (200°C). Toss the sliced squash and onions with olive oil, thyme, salt, and pepper. Spread the mixture on a baking sheet and roast for 20-25 minutes, or until tender and caramelized.
