Ingredients:

  • 12 ounces linguine pasta
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 zucchini, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil, chopped for garnish
  • Lemon wedges, for serving (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente.
    • Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.
  2. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
    • Add the sliced zucchini and bell peppers to the skillet, and cook for 5-7 minutes until they are tender-crisp.
    • Stir in the cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
    • Add the fresh spinach and red pepper flakes (if using), and cook until the spinach wilts, about 1-2 minutes.
  3. Combine the Pasta and Vegetables:
    • Add the cooked linguine to the skillet with the sautéed vegetables.
    • Toss everything together, adding a splash of the reserved pasta water if needed to help the sauce coat the pasta.
    • Season with salt and freshly ground black pepper to taste.
  4. Serve:
    • Transfer the vegetarian linguine to serving plates.
    • Sprinkle with grated Parmesan cheese and fresh basil if desired.
    • Serve with lemon wedges on the side for a fresh, zesty touch.

Enjoy your delicious and healthy Vegetarian Linguine, a perfect meal for any occasion!
