Ingredients:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/2 cups warm water (110°F/45°C)
  • 1 teaspoon sugar
  • 3 1/2 cups all-purpose flour
  • 1/4 cup olive oil, plus more for drizzling
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced pepperoni

Instructions:

  1. Activate the yeast: In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the top and let it sit for 5-10 minutes, until frothy.
  2. Make the dough: In a large mixing bowl, combine the flour, olive oil, salt, oregano, basil, and garlic. Pour in the yeast mixture and stir until a rough dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat your oven to 425°F (220°C).
  5. Prepare the focaccia: Punch down the dough and transfer it to a greased baking sheet or a parchment-lined pan. Press the dough out to fit the pan and create dimples with your fingers.
  6. Top the dough with sliced pepperoni and a drizzle of olive oil. Sprinkle grated Parmesan cheese over the top.
  7. Bake for 20-25 minutes, or until the focaccia is golden brown and cooked through.
  8. Cool slightly before slicing and serving.

Enjoy your Pepperoni Focaccia warm or at room temperature, perfect for pairing with soups, salads, or as a standalone treat.
