- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and black pepper to taste
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (4 ounces) diced green chilies
- 2 cups enchilada sauce (homemade or store-bought)
- 12 corn tortillas
- 3 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and onion, and cook until the meat is browned and the onion is soft, about 5-7 minutes. Add the garlic, cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.
- Add Beans and Chilies: Stir in the black beans and diced green chilies. Remove from heat and set aside.
- Assemble the Lasagna: Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish. Place 4 corn tortillas over the sauce, overlapping as needed. Spread half of the meat mixture over the tortillas, then sprinkle with 1 cup of cheese. Repeat the layers with another 4 tortillas, the remaining meat mixture, and another cup of cheese. Top with the remaining tortillas and pour the remaining enchilada sauce over the top.
- Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Let the lasagna cool for a few minutes before slicing. Serve with a dollop of sour cream and garnish with chopped cilantro, if desired.
