Hawaiian-Style Kalua Pork

Hawaiian-Style Kalua Pork is a succulent and flavorful dish that captures the essence of traditional Hawaiian cooking. Typically cooked in an underground oven called an imu, this recipe adapts the method for modern kitchens while maintaining the rich, smoky flavor. Ingredients:

  • 4-5 lbs pork shoulder (pork butt)

Instructions:

  1. Prepare the Pork:
    • Rinse the pork shoulder and pat it dry with paper towels. Make several shallow cuts on the surface of the pork.
  2. Season the Pork:
    • Rub the sea salt all over the pork, making sure to get into the cuts. Drizzle the liquid smoke over the pork and rub it in evenly.
  3. Wrap the Pork (Optional):
    • If using a banana leaf, wrap the seasoned pork shoulder in the leaf and then in aluminum foil. If banana leaves are not available, simply wrap the pork tightly in aluminum foil. This helps retain moisture and flavor.
  4. Slow Cook the Pork:
    • Place the wrapped pork in a slow cooker. Cook on low for 16-20 hours, or until the pork is very tender and easily shreds with a fork. If using an oven, preheat it to 300°F (150°C) and place the wrapped pork in a roasting pan. Cover and roast for 5-6 hours, or until tender.
  5. Shred the Pork:
    • Once the pork is done, carefully unwrap it and transfer it to a large bowl or platter. Use two forks to shred the meat, discarding any large pieces of fat. Mix some of the cooking juices back into the shredded pork to keep it moist and flavorful.
  6. Serve:
