Ingredients:

  • 2 medium zucchinis, sliced into 1/4-inch rounds

  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning

Instructions:

  1. Prepare the Coating:
    • In a shallow dish, place the all-purpose flour.
    • In another shallow dish, beat the eggs.
    • In a third shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried Italian seasoning, salt, and freshly ground black pepper.
  2. Coat the Zucchini:
    • Dredge each zucchini slice in the flour, shaking off any excess.
    • Dip the floured zucchini slice into the beaten eggs, ensuring it is fully coated.
    • Press the zucchini slice into the breadcrumb mixture, coating both sides evenly. Repeat with all zucchini slices.
