  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional)

  • 1/4 cup chicken broth or water (as needed)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Cook the Beans (if using dried beans):
    • Rinse the dried beans thoroughly and place them in a large pot. Cover with water and soak overnight, or use the quick soak method by bringing them to a boil for 2 minutes, then letting them sit covered for 1 hour.
    • Drain and rinse the soaked beans. Refill the pot with fresh water, covering the beans by about 2 inches. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beans are tender. Drain the cooked beans, reserving some of the cooking liquid.
  2. Sauté the Onion and Garlic:
    • In a large skillet, heat the lard or vegetable oil over medium heat. Add the finely chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Mash the Beans:
    • Add the cooked beans to the skillet. Using a potato masher or the back of a spoon, mash the beans to your desired consistency. If the mixture is too thick, add the reserved cooking liquid or chicken broth a little at a time until the beans reach a creamy consistency.
  4. Season the Beans:
    • Stir in the ground cumin, chili powder, smoked paprika (if using), salt, and pepper. Continue to cook, stirring occasionally, for 5-7 minutes until the beans are heated through and well-seasoned.
  5. Serve:
    • Transfer the refried beans to a serving dish. Garnish with chopped fresh cilantro if desired.
