Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Instructions:

  1. Prepare the Ingredients:
    • Season the chicken pieces with salt, pepper, and paprika.
    • Season the shrimp with salt and pepper.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the chicken pieces and cook for 5-7 minutes until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Cook the Shrimp:

    • Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly.
    • Stir in the heavy cream, dried oregano, dried thyme, salt, and freshly ground black pepper. Bring the mixture to a simmer.
  6. Combine and Simmer:
    • Return the cooked chicken and shrimp to the skillet, stirring to combine.
    • Let the mixture simmer for 3-5 minutes until the sauce thickens slightly and the flavors meld together.
  7. Serve:
    • Transfer the chicken and shrimp mixture to serving plates.
    • Garnish with freshly chopped parsley.
