  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Prepare the Tofu or Tempeh: If using tofu, press it between paper towels to remove excess moisture. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu or tempeh cubes and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  2. Cook the Vegetables: In the same skillet, add the bell peppers, broccoli, snap peas, carrot, and mushrooms. Stir-fry for 3-4 minutes, until the vegetables are just tender.
