Swedish Pancakes

Swedish pancakes, or “pannkakor,” are a beloved treat known for their light, thin, and delicate texture, reminiscent of crêpes. Unlike traditional American pancakes, Swedish pancakes are richer and slightly sweeter, making them perfect for a delightful breakfast or a sweet dessert. These pancakes are typically served with lingonberry jam, fresh fruits, or a dusting of powdered sugar, and are often enjoyed rolled or folded. Their simplicity and versatility make them a favorite in Swedish cuisine, offering a comforting and delicious experience that can be enjoyed by all.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 3 large eggs
  • 2 cups milk
  • 3 tablespoons melted butter, plus more for cooking
  • 1 teaspoon vanilla extract
  • Lingonberry jam, fresh berries, or powdered sugar (for serving)

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, whisk together the flour, sugar, and salt.
    • In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
    • Gradually add the wet ingredients to the dry ingredients, whisking until smooth and free of lumps. The batter should be thin and pourable.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or frying pan over medium heat. Lightly coat the pan with butter.
    • Pour about 1/4 cup of the batter into the pan, tilting the pan to spread the batter evenly across the surface.
    • Cook for 1-2 minutes until the edges start to look dry and the bottom is lightly golden brown. Flip the pancake and cook for another 1-2 minutes on the other side.
    • Remove the pancake from the pan and keep warm. Repeat with the remaining batter, adding more butter to the pan as needed.
  3. Serve:
    • Serve the Swedish pancakes warm, rolled or folded, with lingonberry jam, fresh berries, or a dusting of powdered sugar.

Enjoy your Swedish Pancakes, a light and delicious treat that’s perfect for any occasion!
