Instructions

  1. Rehydrate the seaweed:
    • Place the dried wakame seaweed in a bowl and cover it with warm water. Let it soak for about 10 minutes, or until it is fully rehydrated and tender. Drain and gently squeeze out excess water. Chop into bite-sized pieces if needed.
  2. Prepare the dressing:
    • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, mirin (or sugar), grated ginger, lemon juice, and red pepper flakes (if using) until well combined.
  3. Assemble the salad:
    • In a large bowl, combine the rehydrated seaweed, cucumber slices, julienned carrot, toasted sesame seeds, and sliced green onions. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Chill and serve:
