Ingredients

  • 1 1/2 pounds ground beef (80/20 blend for best flavor)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

For the Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet or loaf pan with parchment paper for easy cleanup.
  2. Prepare the meatloaf mixture:
    • In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for a few minutes to allow the breadcrumbs to absorb the milk.
  3. Mix the ingredients:
    • Add the ground beef, egg, chopped onion, minced garlic, Worcestershire sauce, ketchup, salt, black pepper, thyme, and oregano to the breadcrumb mixture. Use your hands to gently mix until all the ingredients are well incorporated, being careful not to overmix.
  4. Shape the meatloaf:
    • Transfer the meat mixture to the prepared baking sheet or loaf pan and shape it into a loaf, about 8 inches long and 4 inches wide.
  5. Prepare the glaze:
    • In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar until smooth. Spread half of the glaze evenly over the top of the meatloaf.
  6. Bake the meatloaf:
    • Place the meatloaf in the preheated oven and bake for 45 minutes. Remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Rest and serve:
    • Allow the meatloaf to rest for 10 minutes before slicing. This helps the juices redistribute and makes it easier to slice.

Enjoy your Just Meatloaf as a deliciously classic dish that pairs wonderfully with mashed potatoes, steamed vegetables, or a fresh salad for a complete and satisfying meal.
