  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cups potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup bell peppers, diced (any color)
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Instructions

  1. Sauté the aromatics: In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic, ginger, and Scotch bonnet peppers, and cook for another 1-2 minutes until fragrant.
