Ingredients:

  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 cups coconut milk
  • 1 cup beef broth
  • 3 tbsp Massaman curry paste
  • 2 medium potatoes, peeled and cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 cinnamon stick
  • 3 cardamom pods
  • 2 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 2 tbsp palm sugar (or brown sugar)
  • 1/2 cup roasted peanuts
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions:

  1. Prepare the Beef: Season the beef cubes with salt and pepper. In a skillet, heat a bit of oil over medium-high heat and sear the beef until browned on all sides. Transfer the beef to the slow cooker.
  2. Sauté the Aromatics: In the same skillet, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent and fragrant. Add the Massaman curry paste and cook for another 2 minutes until the paste is well incorporated and fragrant.
  3. Combine Ingredients: Transfer the sautéed mixture to the slow cooker. Add the coconut milk, beef broth, cinnamon stick, cardamom pods, fish sauce, tamarind paste, and palm sugar. Stir to combine.
  4. Add Potatoes and Cook: Add the potato chunks to the slow cooker, ensuring they are submerged in the liquid. Cover and cook on low for 6-8 hours, or until the beef is tender and the potatoes are cooked through.
  5. Finish the Dish: About 30 minutes before serving, stir in the roasted peanuts and lime juice. Adjust seasoning with more fish sauce or sugar if needed.
  6. Serve: Remove the cinnamon stick and cardamom pods. Serve the curry over steamed jasmine rice, garnished with fresh cilantro.

Enjoy this delightful Slow Cooker Beef Massaman Curry that brings the taste of Thailand to your kitchen with ease and simplicity.
