Perfect for fall or any time of year, this cake is filled with chunks of tender apples and topped with a luscious caramel glaze. It’s a comforting and satisfying cake that is ideal for a cozy dessert, holiday gatherings, or even as a treat with your afternoon coffee.

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk mixed with 1 teaspoon lemon juice)
  • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

For the caramel glaze:

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Fold in the apples: Gently fold the diced apples into the batter until evenly distributed.
  6. Bake the cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Make the caramel glaze: In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream. Bring to a simmer and cook, stirring constantly, for 3-4 minutes until the mixture thickens slightly. Remove from heat and stir in the vanilla extract and a pinch of salt.
  8. Glaze the cake: Once the cake has cooled, pour the warm caramel glaze over the top, allowing it to drip down the sides.
  9. Serve: Let the caramel glaze set slightly before slicing and serving. Enjoy with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.

This Caramel Apple Cake is the perfect combination of moist cake, tender apples, and a rich caramel glaze, making it a crowd-pleasing dessert for any occasion!
