BROCCOLI POTATO SOUP

Instructions:

  1. Sauté the onion and garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened and translucent. Add the minced garlic and cook for an additional minute, until fragrant.
  2. Add the potatoes and broth: Stir in the diced potatoes and pour in the vegetable or chicken broth. Add the dried thyme, if using. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-12 minutes, or until the potatoes are tender.
  3. Cook the broccoli: Add the broccoli florets to the pot and cook for another 5-7 minutes, or until the broccoli is tender but still vibrant green.
  4. Blend the soup: Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth. If you prefer a chunkier texture, blend only part of the soup and leave some chunks of vegetables intact.
  5. Add milk or cream: Stir in the milk or cream and season with salt and pepper to taste. Allow the soup to simmer for another 2-3 minutes to warm through.
  6. Serve: Ladle the soup into bowls and garnish with shredded cheddar cheese, fresh parsley or chives, or croutons, if desired.
