BEEF AND VEGETABLE CASSEROLE

Beef & Vegetable Casserole is a hearty, comforting dish packed with tender chunks of beef, a variety of colorful vegetables, and a rich, flavorful gravy. Ingredients:

  • 1 1/2 lbs beef chuck or stewing beef, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 large carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 3 medium potatoes, peeled and diced
  • 1 cup beef broth
  • 1 cup canned diced tomatoes (or fresh)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Brown the beef: Heat the olive oil in a large ovenproof casserole or Dutch oven over medium-high heat. Add the beef cubes in batches and sear them on all sides until browned. Remove the beef and set aside.
  3. Sauté the vegetables: In the same pot, add the chopped onion, carrots, celery, and mushrooms. Cook for 5-7 minutes until the vegetables begin to soften. Add the garlic and cook for an additional minute.
  4. Deglaze the pot: Stir in the tomato paste and Worcestershire sauce, scraping up any browned bits from the bottom of the pot. Cook for 2 minutes, allowing the tomato paste to caramelize slightly.
  5. Add the beef and liquids: Return the browned beef to the pot, along with the diced tomatoes, beef broth, thyme, and paprika. Season with salt and pepper. Stir well to combine all the ingredients.
  6. Add the potatoes: Layer the diced potatoes on top of the beef and vegetables. Press them gently into the liquid so they cook evenly.
  7. Cook the casserole: Cover the pot with a lid and transfer it to the preheated oven. Bake for 1 1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through. Check occasionally and add more broth if necessary to keep the casserole moist.
  8. Garnish and serve: Once cooked, remove from the oven and garnish with freshly chopped parsley, if desired. Serve hot with crusty bread, mashed potatoes, or over rice.
