BEETROOT BROWNIES

Beetroot Brownies are a delightful, healthier twist on traditional brownies, offering a rich, fudgy texture with the added benefits of earthy beetroot. The natural sweetness and moisture from the beetroot make these brownies irresistibly moist, while the deep chocolate flavor shines through. These brownies are perfect for sneaking in some extra nutrients without compromising on indulgence, making them a great treat for both kids and adults. The subtle flavor of beetroot pairs beautifully with chocolate, creating a unique, wholesome dessert.

Ingredients:

  • 1 cup cooked and pureed beetroot (about 2 medium beets)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips or chunks (optional)
  • Powdered sugar (for dusting, optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Cook the beetroot: Boil or roast the beetroots until tender. Once cooked, peel and puree them in a blender or food processor until smooth. Set aside 1 cup of the beetroot puree.
  3. Mix the wet ingredients: In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and beetroot puree until fully combined.
  4. Add the dry ingredients: In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the chocolate chips or chunks, if using.
  5. Bake the brownies: Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  6. Cool and serve: Let the brownies cool completely in the pan before cutting into squares. Dust with powdered sugar if desired.

These Beetroot Brownies are incredibly rich, moist, and full of chocolatey goodness, with the added bonus of being slightly healthier. They’re a fantastic treat for those looking to sneak in some extra veggies without anyone noticing!
