Turkey Empanadas

Made with flaky pastry dough and filled with seasoned ground turkey, vegetables, and a blend of spices, these empanadas offer a burst of flavor in every bite. Ingredients

For the dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1/4 cup cold water
  • 1 tbsp vinegar

For the filling:

  • 1 lb ground turkey
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 1/2 cup bell pepper, diced
  • 1/2 cup tomato sauce
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro or parsley (optional)
  • 1 egg (for egg wash)

Instructions

  1. Make the dough: In a large bowl, whisk together the flour and salt. Add the cold, cubed butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg, water, and vinegar. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms. Turn the dough out onto a lightly floured surface, knead briefly, then shape into a ball, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the filling: In a large skillet, cook the ground turkey over medium heat until browned, breaking it apart as it cooks. Add the onion, garlic, and bell pepper, and sauté until softened, about 3-4 minutes. Stir in the tomato sauce, cumin, paprika, salt, and pepper. Let the mixture simmer for 5-7 minutes, then remove from heat and stir in the fresh cilantro or parsley if using. Allow the filling to cool slightly.
  3. Roll out the dough: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. On a floured surface, roll out the dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles.
  4. Assemble the empanadas: Place a spoonful of the turkey filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together with a fork to seal. Place the empanadas on the prepared baking sheet.
  5. Egg wash and bake: In a small bowl, beat the egg with a tablespoon of water. Brush the tops of the empanadas with the egg wash. Bake for 20-25 minutes, or until the empanadas are golden brown.
  6. Serve: Let the empanadas cool slightly before serving. They can be enjoyed warm or at room temperature, with your favorite dipping sauce.
