Cauliflower Hummus

Cauliflower hummus is a delightful and healthy twist on the classic chickpea-based dip. This version swaps out chickpeas for roasted cauliflower, making it a lighter, low-carb option that’s still creamy and full of flavor. Blended with tahini, lemon juice, garlic, and olive oil, this cauliflower hummus offers the same satisfying taste and texture, with a slightly nutty and sweet edge from the roasted vegetable. It’s perfect for serving with fresh veggies, pita, or as a spread in sandwiches and wraps. Whether you’re looking for a nutritious snack or an impressive appetizer, cauliflower hummus is a delicious and versatile addition to your recipe repertoire.

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 2 tablespoons water (more if needed)
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika (optional for garnish)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)
  • Extra olive oil, for drizzling

Instructions:

  1. Roast the cauliflower: Preheat your oven to 400°F (200°C). Toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until tender and golden brown.
  2. Blend the hummus: Once the cauliflower is roasted, let it cool slightly. Transfer the cauliflower to a food processor, along with garlic, tahini, lemon juice, cumin, and water. Blend until smooth, adding more water if needed to reach your desired consistency.
  3. Season and serve: Taste the hummus and season with salt and pepper to your preference. If the hummus feels too thick, add a little more water or olive oil to smooth it out.
  4. Garnish and enjoy: Transfer the hummus to a serving bowl. Drizzle with extra olive oil and sprinkle with smoked paprika and fresh parsley, if desired. Serve with pita, fresh vegetables, or use as a sandwich spread.

Enjoy this nutritious and flavorful cauliflower hummus as a dip or a spread, perfect for any occasion!
