Thai Red Curry Paste

Ingredients

  • 8-10 dried red chilies, soaked in warm water and seeds removed
  • 2 stalks lemongrass, white part only, finely chopped
  • 4 cloves garlic, minced
  • 1 small shallot, minced
  • 1-inch piece of fresh ginger or galangal, peeled and minced
  • 1 tbsp coriander seeds, toasted and ground
  • 1 tsp cumin seeds, toasted and ground
  • 1/2 tsp white pepper
  • 1 tbsp shrimp paste (optional for added umami)
  • 1 tbsp lime zest
  • 2 tbsp fish sauce (or soy sauce for a vegetarian option)
  • 2 tbsp vegetable oil (or water for blending)

Instructions

  1. Prepare the ingredients: Soak the dried red chilies in warm water for about 10 minutes to soften them. Once soft, remove the seeds for a milder paste (or leave some for more heat) and chop the chilies.
  2. Toast the spices: In a dry skillet, toast the coriander seeds and cumin seeds until fragrant, about 1-2 minutes. Grind them into a fine powder using a mortar and pestle or spice grinder.
  3. Blend the paste: In a mortar and pestle or food processor, combine the soaked chilies, chopped lemongrass, garlic, shallot, ginger, ground spices, lime zest, shrimp paste, and fish sauce. Pound or process until you achieve a smooth paste. Add vegetable oil or a little water to help blend if needed.
  4. Store and use: Transfer the curry paste to a jar or airtight container and store it in the refrigerator for up to 2 weeks or freeze it in portions for longer storage.
