Ingredients:
- 4 medium-sized potatoes, boiled, peeled, and cubed
- 1 medium onion, thinly sliced
- 1 tablespoon vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 8-10 curry leaves
- 2 green chilies, slit lengthwise
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional for extra heat)
- 1 teaspoon ginger, grated
- Salt to taste
- Fresh coriander leaves, chopped for garnish
- 1/4 cup water (if needed)
Instructions:
- Boil the potatoes: Boil the potatoes until tender. Once cooled, peel and cube them. Set aside.
