Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make the dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream the butter and sugar until light and fluffy. Beat in the egg, vanilla, and almond extract (if using). Gradually add the dry ingredients and mix until combined.
  3. Chill the dough: Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 30 minutes.

  5. Bake the cookies: Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  6. Decorate: Once the cookies are fully cooled, decorate with royal icing or buttercream, using pastel food coloring and adding sprinkles or candy eggs for a festive touch.
