Pickled Peaches

Ingredients:

  • 4-6 ripe peaches (about 2 pounds), halved and pitted

  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Peaches: Bring a large pot of water to a boil. Carefully add the peaches and blanch for about 30 seconds. Remove them with a slotted spoon and immediately transfer to an ice bath to cool. Once cool, peel the peaches, halve them, and remove the pits.
  2. Make the Pickling Liquid: In a medium saucepan, combine the vinegar, sugar, water, cinnamon, allspice, cloves, salt, and lemon juice. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool slightly.
  3. Pack the Peaches: Place the peach halves in clean, sterilized jars, packing them tightly but gently to avoid bruising. Pour the pickling liquid over the peaches, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top of each jar.
  4. Seal and Process: Wipe the rims of the jars with a clean cloth to remove any residue. Seal with sterilized lids. If you want to can them for long-term storage, process in a boiling water bath for 10-15 minutes.
  5. Cool and Store: Let the jars cool completely at room temperature. Once cooled, store them in the refrigerator if not processed, or in a cool, dark place if sealed. Allow the pickled peaches to sit for at least 24 hours before enjoying to let the flavors meld.
