Lasagna Roll ups

Lasagna roll-ups are a delightful twist on the classic Italian dish, combining the rich flavors of traditional lasagna with the convenience of individual servings. This recipe is perfect for family dinners, potlucks, or meal prep, offering a comforting and satisfying meal that’s easy to customize with your favorite ingredients. Serve with a side salad and garlic bread for a complete feast!

Ingredients:

  • For the Roll-Ups:
    • 9 lasagna noodles
    • 1 cup ricotta cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 large egg
    • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
    • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
    • Salt and pepper to taste
  • For the Marinara Sauce:
    • 2 cups marinara sauce (store-bought or homemade)
    • 1 teaspoon olive oil
    • 1 clove garlic, minced
    • 1/2 teaspoon red pepper flakes (optional)
    • Fresh basil leaves for garnish (optional)

Instructions:

  1. Cook the Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.
  2. Prepare the Filling: In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan, egg, spinach, Italian herbs, salt, and pepper. Mix until well blended.
  3. Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish. Take one lasagna noodle, spread about 2-3 tablespoons of the cheese mixture evenly over it, then roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining noodles.
  4. Add Sauce and Cheese: Pour the remaining marinara sauce over the roll-ups, ensuring they are well-covered. Sprinkle the remaining mozzarella cheese on top.
  5. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  6. Serve: Let the roll-ups cool for a few minutes before serving. Garnish with fresh basil, if desired. Enjoy your delicious and hearty lasagna roll-ups!
