Ingredients

  • 1 small red onion, finely chopped
  • 1/2 cup red bell pepper, diced

Instructions

  1. Blanch the Green Beans: Bring a pot of salted water to a boil. Add the fresh green beans and cook for 3-4 minutes, until they are tender but still crisp. Drain and immediately transfer the green beans to an ice water bath to stop the cooking process. Drain again and set aside.
  2. Combine the Beans and Vegetables: In a large bowl, combine the blanched green beans, kidney beans, chickpeas, black beans, chopped red onion, and diced red bell pepper. Toss to mix evenly.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, vinegar, sugar, Dijon mustard, salt, and pepper until the sugar is dissolved and the dressing is well combined.
