Ham And Lentil Soup

Ham and Lentil Soup is a hearty and flavorful dish that’s perfect for a cozy meal, especially during cooler months. The smoky richness of ham combined with the earthy lentils creates a well-balanced and satisfying soup. Packed with protein and fiber, this soup is not only delicious but also nutritious. It’s a great way to use up leftover ham, and the addition of vegetables like carrots, celery, and onions adds depth and texture to the broth. This one-pot meal is easy to prepare and can be made ahead of time for an even richer flavor the next day.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups dried lentils, rinsed
  • 6 cups chicken or vegetable broth
  • 2 cups cooked ham, diced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin (optional)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley for garnish (optional)

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, until softened. Add the minced garlic and cook for another minute.
  2. Add the lentils and broth: Stir in the lentils, followed by the chicken or vegetable broth. Add the diced ham, bay leaf, thyme, and cumin (if using). Bring the soup to a boil.
  3. Simmer the soup: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for 30-35 minutes, or until the lentils are tender. Stir occasionally, and add more broth if needed to reach your desired consistency.
  4. Season and serve: Remove the bay leaf and season the soup with salt and pepper to taste. Garnish with fresh parsley if desired.
