Provencal Beef Stew

Provençal Beef Stew is a hearty and flavorful dish inspired by the rustic cuisine of southern France.   • 1 cup pitted black olives
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Brown the Beef: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef from the pot and set aside.
  2. Cook the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  3. Deglaze the Pot: If using red wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
  4. Add the Tomatoes and Broth: Stir in the diced tomatoes, tomato paste, and beef broth. Return the browned beef to the pot.
  5. Season and Simmer: Add the thyme, rosemary, bay leaf, and olives to the pot. Season with salt and pepper. Bring the stew to a simmer, then reduce the heat to low, cover, and let it cook for 1 ½ to 2 hours, or until the beef is tender.
  6. Adjust Seasoning: Check the stew for seasoning, adding more salt and pepper if needed. Remove the bay leaf before serving.
