Mushroom Tacos Recipe

Ingredients:

  • 1 pound mixed mushrooms (such as cremini, shiitake, or portobello), sliced

  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas

Optional toppings:

  • Sliced avocado
  • Fresh cilantro
  • Salsa or pico de gallo
  • Crumbled queso fresco or feta cheese
  • Sour cream or Greek yogurt

Instructions:

  1. Cook the mushrooms: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for 1 more minute until fragrant.
