Cauliflower Chowder

Cauliflower Chowder is a comforting and creamy soup that’s rich in flavor but light on calories. By using cauliflower as the star ingredient, this chowder offers a healthy, low-carb alternative to traditional potato-based chowders, while still delivering that thick, hearty texture. The blend of sautéed vegetables, garlic, and herbs enhances the natural sweetness of the cauliflower, while the addition of creamy milk or a dairy-free alternative creates a velvety finish. This delicious soup is perfect for a cozy lunch or dinner, and can easily be customized with your favorite toppings like crispy bacon, cheese, or fresh herbs.

Ingredients:

  • 1 large head of cauliflower, chopped into florets
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk (or unsweetened almond milk for a dairy-free option)
  • 1 tsp thyme
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Fresh parsley or green onions for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté for 5-6 minutes until softened.
  2. Stir in the garlic and cook for another minute, until fragrant.
  3. Add the chopped cauliflower, thyme, smoked paprika, salt, and pepper. Stir to coat the vegetables in the seasoning.
  4. Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the cauliflower is tender.
  5. Use an immersion blender to partially blend the soup for a chunky texture, or fully blend it for a smoother consistency.
  6. Stir in the milk, and if you prefer a thicker soup, add the cornstarch mixture and simmer for another 2-3 minutes until the chowder thickens.
