Pressure-Cooker Orange Chipotle Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh orange juice
  • 1 chipotle pepper in adobo sauce, chopped
  • 2 tbsp adobo sauce (from the chipotle peppers)
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Set the pressure cooker to sauté mode and heat the olive oil. Add the chicken breasts and sear for 2-3 minutes on each side until lightly browned. Remove the chicken and set aside.
  2. In the same pot, add the garlic and cook for 30 seconds until fragrant. Stir in the orange juice, chipotle pepper, adobo sauce, honey, cumin, and smoked paprika.
  3. Return the chicken to the pot, making sure it’s submerged in the sauce. Season with salt and pepper to taste.
  4. Seal the pressure cooker and cook on high pressure for 10 minutes. Allow the pressure to release naturally for 5 minutes, then manually release the remaining pressure.
  5. Once done, remove the chicken and let the sauce thicken slightly by simmering it for a few minutes if desired.
  6. Garnish with fresh cilantro and serve hot.
